Frequently I'm using Squeeze Commander because it displays track ratings in the 'now playing' screen. The stars are touchable to change the rating. I found out that in Orange Squeeze, ratings can be changed in the pop-up list of the cover art. But this is too complicated and too well hidden for my listening behaviour...
