It has been a long time since I've done this, but isn't it possible to update the Touch's firmware via a USB stick? That is, copy the firmware file to a USB stick (root directory), insert the stick in the Touch, do the Touch's Settings > Advanced > Software Update menus, and then be prompted (and accept) to use the USB as the source. Using a SD card should work similarly.
