I've never used ReplayGain - never felt the need!
As to the OP's question, I've occasionally used the Linux touch command to reset the file date after I've edited tags, so that the edited files don't appear in New Music. It's a bit of a faff though. I use Kid3 for tagging, and it does have an option to preserve file time stamp. I guess that must be a widespread in file tagger apps.
