Yes, that did sound quite tricky. Also it doesn't seem to be possible to capture the sound indefinitely, a time period is required.
Anyway, followiTunes is done as-is: it's not supposed to be a plugin, because your SlimServer might not be on the same machine as iTunes. Really, installing Perl and double clicking on the script should be all you need to do. Give it a go and I suspect you'll realise it's not quite what you want!
