I chose a set of tools from the replies you all gave me. I used Album Art Downloader to get the album art, and jSqueeze Export Utility from this thread listed: http://forums.slimdevices.com/showthread.php?t=28457.
Album Art Download is far from perfect, but pretty good. And the java exporter is really simple to use. Though it does list by album, not artist. I found that the java tool crashed on my PC if I went over about 100 albums. Running it on a Mac, it worked perfectly for almost 800 albums.
