Correct. The ESX server mounts a LUN and formats it as VMFS. Other ESX servers can safely simultaneously mount and use that same LUN, all of them reading and writing simultaneously as they see fit. The individual VMs' disks appear as, basically, flat files (VMDK files) on that filesystem.
