burning CDs

Hey there.  Was wondering if you could walk me through how to burn  
several audio files to CD.  I have gotten one book recorded and then  
turned into MP3s, and I'm working on the next one.  Is there a way to  
burn both books to the same CD, kind of in separate folders?  I mean,  
the first book in the series would be in one folder with all it's  
chapters, and the next book would be in its own folder.  If so, can  
you tell me how to do this?  I know it can be done using iTunes, but  
I have no clue how, or even if that's the best way to go.  Any help  
on this would be appreciated.
