The term Gold Master originally came from the recording industry where
the master disc or cylinder was used to create all the other copies. See

So the Gold Master in the software world is the final copy where
everything is as good as it's going to get and all the copies are made
from it. It's a hard point to come to since there is always more you can
do to make things better, but you have to finally put your foot down and
ship something.
