I tend to use OctaMED to create my samples. Its far from the best at this, but I used to produce everything on Amigas with MED so it saves me learning a whole new program.
My music partner CJ Trinity writes all our MIDI stuff on CakeWalk, exports loops to WAV & sends them to me.
