How long do you say that the SRV has been in "useful" operation, with support in a substantial fraction of *deployed* DNS implementations and support in a
substantial fraction of DNS administrative operations?

There are certain other protocols for which SRV has been an integral component for some time: SIP, Jabber and KRB5 spring to mind.

Tracking the deployment of those protocols might be a useful way to start finding approximate answers to your question (e.g. hunt down the date at which asterisk implemented their SRV option within <http://svn.digium.com/view/asterisk/trunk/>).
