Hi Francisco,
Recently we have added the ability for a collection or a community to be
added to the RSS feed which allows for iTunes U podcasting. The approach I
took was to use the collection's RSS feed, and alter it to support
podcasting. I only enable podcast feeds at the collection/community level.
If it is important, you could alter the Java code to make things podcastable
at the entire site level, based on the file-type. This is going to be one of
the new features in DSpace 1.8 which releases next month.

An example RSS feed from one of our podcast collections:

Also, I've been in talks with Jill Vermillion from Apple's Education group,
so if anyone has materials that you'd like to podcast, join the
conversation. I believe that in iTunes, you can subscribe to a feed of
audio, video, and PDF's. So you could enable that feature for any of your
collections that have those materials.
You said that your need was to expose your entire repository. Sorry that I
haven't answered any of your questions about OAI, I've never touched it.
Technical questions are better to ask in dspace-tech.
