Your solution is great and help us a lot to integrate our dspace repository with ItunesU. The approach I took was to use the collection's RSS feed, and alter it to support podcasting. I only enable podcast feeds at the collection/community level. If it is important, you could alter the Java code to make things podcastable at the entire site level, based on the file-type. I believe that in iTunes, you can subscribe to a feed of audio, video, and PDF's. So you could enable that feature for any of your collections that have those materials.
