One thing nobody mentioned is setting up an imap server on your linux box, 
connecting to it in 
Outlook and just copying all your mail across, then doing the reverse into 
thunderbird.
IMAP is supposed to support folders and all the other stuff, so it should be a 
click-n-drag type 
affair. You can use that concept to migrate to/from almost any client you like.

A temporary IMAP server should not be too hard to install on your linux box. 
(If you don't have a 
linux box then you had better either get one, or find a different list to lurk 
on) :p)
