The only reason you need to use the adapter is if you want the Mac to think
a monitor of resolution other than 640x480 is attached. This, in fact, can
be a life-saving feature if you happen to accidentally set your video to a
resolution your monitor doesn't support. You shutdown, detach the monitor
and reboot, the system defaults to 640x480, you shutdown again, reattach the
monitor and when you reboot, you're at 640x480 again. Note that this may or
may not work with 3rd party video cards -- this only applies for sure on
Macs with motherboard video.
The adapter trick is particularly useful if you're trying to run a
"headless" Mac and access it by Timbuktu or VNC and you want it to have a
resolution different from 640x480.
