I had this identical problem when I first began to load big files and 
disk images onto a 20GB IBM Travelstar in an MCE Data shuttle via PCMCIA 
card.  Quite a disconcerting bugaboo until I found that files would copy 
with all extensions off - which was  good news.  Then I enabled 
extensions in small groups with Conflict Catcher, rebooted and tested 
file copying until I found the culprits.  It turned out, in my case that 
it was the Apple Speech Group of extensions that somehow interrupted the 
large file transfers.!?!  I split this group apart and trial and error 
narrowed it down to just the Speech Recognition extension.  Everything 
works fine now with great speed when that extension is disabled.  I can't 
think of any specific reason why except for some system call voodoo.  
Anyway try this and see.
