Sites like Gmail and Twitter have links at the very bottom of their site that say "View in Standard" or "View in Desktop". Facebook does on their m.facebook site and their regular Facebook site but not on their x.facebook site (which Android defaults to so it's very frustrating to try getting to the mobile version and sometimes, while IN the mobile version, it'll suddenly switch to x.facebook again). In addition to the cookie idea that Laura suggested, I would like to cast my vote for a link at the bottom of the site that would also allow you to determine how your viewing the mobile site. - Chasy.
