One of the things I have done is to have students pick a product and 
develop a life-cycle analysis.  This can be done individually, or 
better, as a group project with different students taking on different

steps of the process.  For example, I did a whole class on an actual 
cotton T-shirt starting with cotton production and ending with the sale

and use in a second-hand market in Africa.  The journey says a lot
about 
the global system.  Students can pay attention to labor, value-added 
processes and environmental impacts at each step.
