If you want to use ip phones the most efficient way is to create Lan
to Lan tunnels and use the phones over this lan.
This is easy to set up with endian.
If your create tunnels starting from the phone you have to make be
sure that the voice traffic also passes trough this tunnel and does
not try to go between the ip adressen directly.

I don't know any problem to use a firewall with iphone, since the
firewall supports VPN passthrough. You need to make a some research
to discover the kind of VPN iphone do, and, If this VPN client is
compatible with L2TP.
By the way, you can install PPTP server in a Endian Box, since
Endia is a Linux distro customized to work like a secure firewall
out of box.
