Countries use a wide variety of methods. Sometimes a voter has a
possibility to choose one of the lists and then choose one or more
candidates within the list (preferential voting). More rarely, however,
voters can simultaneously vote for candidates on more than one list (so
called panachage). Often countries are divided into smaller districts
and there are separate lists available to voters of each district. 

There's a vast of literature available on this topic. See for instance
David Farrell's "Electoral Systems: A comparative introduction" or one
of the books written by Arend Lijhphart.
