Some are, but some aren't. When I'm in that "don't touch anything" mode I'll still switch mail clients at the drop of a hat. Mostly because when you have Mail hooked up to IMAP and find yourself really missing that one feature from Thunderbird, hey, all the mail is on the server anyway. But, on the whole, you make a fair point. Plus we need to get some 0.x release out, and "support multiple OSs" doesn't strike me as needed for the first cut. I just hope we don't build ourself into a corner in that regard -- as this thing gets a user base we're going to see more people grumbling about compatibility.
