But, that doesn't handle the case of non-replies (when you start writing
a new email to someone).

This is one of the features of Mulberry that I use with virtually every piece of mail I send or receive -- outgoing mail has a default folder, but can easily be changed, and if it's a reply, I can choose to have the original message be re-filed at the same time (first, before the reply, so it sorts properly in the destination folder).

It's ugly, but man is it useful...
