I suspect that what happens here is that Emailer is adding a index field in its database for each record when you initiate a new sort. Once this is done it can sort on that field very quickly. Try a new field and it has to add the index field for it so it takes longer.
It must be folder independent (ie. it indexes the whole database) because once you have sorted by all fields in one folder any sort seems to be quick as in all folders. The worst case I find is when yo do the first sort after starting Emailer. Best thing is probably to sort by each fied when yyou start Emailer and it should then be quick as lightning untill to quit.
