 AFAIK Thunderbird has always been able to use different SMTP servers,
(if that's what you really want).

 Set up the SMTP servers in the 'Outgoing Server (SMTP)' section of the
Tools -> 'Account Settings...' dialog. Select the SMTP server for each
account by clicking the "Advance..." button in the account's 'Server
Settings' section (also in the Tools -> 'Account Settings...' dialog).

 Unlike CE, Thunderbird supports Transport Layer Security (TLS),
including SMTP AUTH, as well as secure SMTP over SSL. It's also much
easier, in Thunderbird, to switch SMTP servers on-the-fly if one server
is having troubles.
