Go into your Account prefs for any account, then you will find an
Outgoing Server popup, click that popup and select Edit Server List
from the bottom of it.
You will then be given a list of all the SMTP Servers that Mail knows
about. Remove any that you should not have (such as the Mac.com one
if you no longer have a Mac.com account).
That will clear Mail's knowledge about those servers. If you had
previously selected to use one of the servers that you deleted, quit
and relaunch Mail to get it to reset its choices of which SMTP server
to use (once you tell Mail to use an alternate mail server, it will
always try to use that one until you quit and relaunch).
