The typical approach to this sort of problem in my day-job is a look-up table.
They can approximate any function, and none.

For example, one PID controller I work with has the I gain computed
from the product of three separate 2D lookup tables.
(So, the I Gain varies according to the value of 6 other values.
Temperature, demand value, pump speed etc)
