emc is capable of controlling 6 linear and 3 rotary axes. Your type of machine might be called XYZUV when moving motors on both bridges.
I don't believe there are any configuration examples of wire cutting machines. However, we'd be happy to help you get it working with emc--it sounds like a fun project.
