For plasma or basic waterjet cutting I think that Sheetcam is very hard 
to beat.

If you find one that is open source that works, let us know.  I looked 
for quite a while and in the end was happy to pay the $165 or so for 
Sheetcam.

There is a Linux version of Sheetcam also so if you are doing plasma 
with EMC2, you can run it on the same machine.  I haven't run the Linux 
version of sheetcam yet, I have used the Windows version so far.

Like most cam software there is a learning curve, but once you get the 
hang of it, it is very fast to use.
