I had considered buying one of their small servomotors with attached
encoder (because they're only 30 km from my door), but the encoders
don't have index.

You haven't chosen the easiest task to get perfect, but I like Andy's
approach. If it really is necessary to compensate for cold junction
temperature variation, then that could also be done in software, if you
place a temperature sensor nearby. (And calibrate it. ;-)
