Using brushless motors is unnecessary as far as noise is concerned, the noise comes from the gears. Cheapest solution: use a € 1.50 chicken grill motor for 1.5 volts and give it 5 volts, so it will turn a litle faster (Hendlspieß, if you know what I mean) and it has plenty of torque.
