You will forever regret building a plasma machine without a proper Z 
axis and Torch Height Control (THC). That was the action of the torch 
touching and then retreat to cut that you saw. Without the Z axis you 
will cut some hobby stuff, maybe. To do a proper job of it, the Z axis 
and THC is needed. I service cnc machines that other folk have build for 
themsleves as part of my business and I get to see all kind of problems 
related to plasma machines. I also build my own machines for customers 
and for all the trouble that comes with a plasma machine, I would not do 
without the Z and THC.
There are many other factors as well when it comes to making a good cut. 
Search a bit on "constant velocity" and plasma's. You will be surprised 
to see the amount of effort that is required do do a proper cut.
Also the Z axis and THC does not cost that much more.
Finally, in my opinion, a plasma without a Z axis is like a fishing 
without a hook. It can be done, but it take much more effort.
