Fortunately the temperature in a reflow oven needn't be regulated to within one degree, AIUI, because the A/D converter on an AVR (Arduino) or any other 8 bit MCU that I've come across is only 8 bits, minus offset and gain errors, unless you take the trouble to correct for them.
