If you don't actually use that account for email, then Entourage doesn't care if it's there or not. Only if you want to be able to send and receive email with that account do you need an account defined in Entourage. Even if you have Entourage set to automatically make a connection, that information comes from the Mac OS, not your Entourage email accounts.
