No, Entourage follows the RFC protocols - 80 columns maximum, so they wrap
at the nearest word end to 76 characters leaving room for 4 reply-quote
symbols (>) to get added by later respondents without mangling anything.

Some other email clients don't follow protocols. Not Entourage's fault.

Most email clients (Eudora, etc.) seem to get it right. I don't know about
Outlook, although 70 seems awfully narrow. Are you sure about that? I'd have
guessed 76 without the 4 extra, but I don't actually know. Don't forget they
all break before the nearest word end previous to the cutoff.

There's no setting to do that, aside from doing it manually by pressing the
Return key when a line looks long enough.   A script could do it, but I
don't know whether anyone's done so. I wouldn't - it's too fussy. Or you
could reply in HTML.
