This is a known issue with Entourage X - the checkbox was removed. It's documented on the Microsoft site: <http://www.microsoft.com/mac/entouragex/entouragex_main.asp?embfname=en_PS5 _Tshoot.asp&embfpath=featartx#Known>
The way to get around this is to create a "Do not synchronize" category, and assign it to records you do not want to synchronize. You can then filter this category from the synchronization.
