If you upgrade to OS 10.3, you can use the user-switching feature to have 2 users signed in simultaneously with Entourage running in each.
I'm not sure if this will work, but you could try duplicating your Office 2001 folder and running 2 copies of Entourage at the same time in 2001 against different identities.
