Shortening the fonts list in Entourage X

Title: Shortening the fonts list in Entourage X

Is there any method of shortening the font list that shows up in the drop-down menu of the tool bar of a new email window? Currently, all the fonts in my Mac show up (it's over 100); what I'd like to do is just have 3 or 4 in that list.

Any trick developed for doing this? There is a Default Fonts for Language selection in the General Preferences, and I'm wondering if there's a way to place those 3 or 4 fonts into a separate folder, and then choose that folder in this pref setting?
