So what should someone do if they have there personal fonts installed as in Open type fonts... Is the issue with the fonts that are installed in the user folder for Entourage?

Why some of the Entourage-installed fonts are chosen in preference to the original font is a mystery to me. My current guess: perhaps the program originally intended to use a certain font; it was not available, so, prior to Entourage, the program chose some system font that worked just fine appearance-wise; when the Entourage-installed fonts became available, somehow the program will choose at least two of them in preference to the system font that it had chosen in the past. Hmmm, "post hoc, ergo propter hoc." Sorry for not realizing that sooner.
