When I go backpacking, I take always all may EOS stuff with me, which
means: EOS 5, Sigma 2.8/70-200EX, EF 1.8/50, 430 EZ, and now my 17-
35EX instead of my consumer 28-80USM lens. And also my 2xconverter,
cable release, filters and most of the time a tripod (Manfrotto
MA055).

I alwasy feel very limited when using a backpack the size a Nature
Trekker or similar has. So my solution: I take a really big backpack
(e.g. Gregory Katmai) which has a large zipper on the front for fast
access to my gear. With such a high-end backpack it´s quite easy to
also carry around some other stuff like tent, sleeping bag etc.

I think I would feel limited taking only a EOS 300 with me and let´s
say a 28-105, as I´m used to my stuff. Instead, I try to get very
lightweight outdoor gear. Hey, if you can afford lenses for thousands
of dollars, there should be some money left for highend tents and
backpacks.

O.k. I have to admit I´m a trained mountain climber and I don´t care
carrying a backpack with 20+ kilos as I´m used to. I also go rock
climbing with my EOS gear :-) But then not with 20kilos on my back.

But let me say it again: with the right backpack it gets easier to
carry heavy loads. So if you tend to make longer backpacking trips,
you should consider to buy lightweight highend gear.
