A couple of years back I traveled six weeks in South-East Asia,
including two weeks in Borneo, dragging EOS 5 and a couple of
lenses into all possible places, beaches, rainforests, etc.

I had two small waterproof Cullman bags: one big enough for EOS 5 and
one medium-size lens, and another one intended for P&S but big enough to
hold a lens without body (my biggest lens then was the 75-300IS,
and it fit there as it had been designed for it).
They were wonderful: not a drop of water got in even when I managed
to drench myself (slipping and falling on my face on knee-deep
water in a swamp), nor any sand (which may be even worse than water).

I didn't take any other precautions against humidity, no 
desiccants or the like.

During the entire trip my camera gear suffered no ill effects except
once when I slipped on a wet rock and fell on top of it (in the bag
fortunately): a piece of plastic chipped off the flash (everything
still worked, including the flash).

Anyway, I wouldn't worry too much. If you're staying in hotels and not
camping in the jungle you should be fine, just take a good camera bag,
maybe throw in some desiccants and lots of film, and enjoy your trip!
