Darktable is already available in EPEL:
http://dl.fedoraproject.org/pub/epel/7/SRPMS/d/darktable-1.6.9-6.el7.src.rpm

Fedora Rawhide has 2.0, so that would probably be a better place to start
from:

It's ok for a personal/COPR repo, but not for general use in EPEL/Fedora.
Using one of the above SRPMs would probably be the better place to start
because they'll meet (or at least should meet) the packaging guidelines.
