To be clearer, graphically my first choice would be the flower -- very
nice logo.
Problem is, the association with étoilé is not obvious, particularly
if you don't know
the flower (I didn't, am I alone ?).
I like the clean typography of the 3rd logo, the idea of hexagons, but
not the hexagons graphically :D (well, not for the main logo at least).
The 2nd logo is ok but I don't like the font used, I would much prefer
the 3rd logo font for example. And perhaps, the star is too small ?..
a variation on it with a couple
of smaller star could be interesting too (after all, étoilé means starred) ?

By the way, what's the rule for using the accents ? It seems people
like them (and well, they at least differenciate from e-toilet ;-) but
I thought we said we shouldn't use them as they are difficult to type
for most people ?..

Could we simply say that we'll use the accents on the logo, but not in
the text ?..

Cheers,
