I think you don't have correct user defaults.

Look for 'defaults write NSGlobalDomain GSAppKitUserBundles'
and find the right path for Camaelon and EtoileWildMenu.
Yep -- perfect. When I read the defaults, they were set up to be:
NSGlobalDomain GSAppKitUserBundles '(
/Local/Library/Bundles/Camaelon.themeEngine,
/Local/Library/Bundles/EtoileMenus.bundle,
/Local/Library/Bundles/EtoileBehavior.bundle
)'
So I changed those to:
NSGlobalDomain GSAppKitUserBundles '(
/System/Library/Bundles/Camaelon.themeEngine,
/System/Library/Bundles/EtoileMenus.bundle,
/System/Library/Bundles/EtoileBehavior.bundle
)'
And that seems to do the trick!
