There should be legally nothing to stop you. Apple can copyright it's API
implementation, but it cannot monopolize the API structure by patents, at least
not (yet) over here in Europe :-)

I think it would be a very nice thing to have GStreamer bindings. GStreamer is
an actively developed and live project and appears to stay that for quite some
time.
