It does. Every installation of Evolution has, or should have, the internal help files installed. That has sections not only on Backup/Restore and syncing data, but also a section on storage locations. For local "On this Computer" mail, then look in ~/.local/share/evolution/mail/local/ Please, though, don't go modifying or playing with Evolution's internal files. It will confuse things and will likely lead to data loss.
