Plus what's faster - restoring one huge information store (if a disaster
strikes) or one of the smaller ones?

You see, with Exchange 5.5 Enterprise you are lured into further growing
your information store. If you backup/restore system is not very fast, then
your backups will be taking longer and longer time to complete and your
restores will take a pretty long time too.

I would say the Standard edition is fine if it fits the business
requirement. SBS which includes Exchange Standard is a bargain for a small
company.

Enterprise has (virtually) unlimited message storage, so it can easily
support more than the equivalent of 2 or 3 (or more) standard edition
servers. I think the real theory with building a large enterprise edition
server is that it is 'large', has multiple redundant components and highly
resilient to failure. A $2,600 server is not going to be as resilient. 

I guess it's just different strokes for different organizational needs, but
I do still accept your point though, as we had to make a decision about
purchasing enterprise edition last year as well. We considered a second
server, but in the end it was just more straightforward, and one less server
to manage, to plump up for the enterprise upgrade.

That's I good question I have been wondering myself.  If a company is up
against the 16GB limit of Exchange standard, should the upgrade to
enterprise or get another standard box?  Has anyone done any pricing
comparison on:
1) One Big box running Enterprise. $3,999 Enterprise license.
2) Two small boxes running standard. $1,398 two Standard licenses.

The $2,600 difference would almost buy the hardware for the second box. What
am I missing?

I was given this suggestion my by boss:  Why don't I setup a second exchange
server then add an additional database to it? I am not exactly sure how that
would work.  How would two exchange servers that are not in a cluster
function together? How would the mail reach the correct server? How would my
users know where to pick up their mail? What are the issues with doing
something like this?

I am in between a rock and a hard place...It seems as if all our "interim
fixes" has finally caught up to us. But anyway here is my situation (keep in
mind I am not an exchange person...but in this case I have to be one)

Two weeks before the roll out of our new windows 2003/exchange 2003 servers
I put the whole thing on hold because I didn't believe the standard versions
would help. I have been fighting to get the funds for the enterprise
versions since then. However while poking around our exchange server I
noticed that our storage group was fairly large, actually the size of the
database is 15.7 gigs (keep in mind the maximum size is 16 gigs) my question
is this:

1. Can I mount an exch 2000 database in exch 2003? (I know how to migrate
users the long way...) 2. Is there a way to compress the database until I
receive the necessary funds to upgrade? 3. How do you all deal with everyone
using their email as filestorage? 4. Is there a quick fix for my large
database issue.
