I wouldn't consider it on anything other than VMWARE ESX with lots of
procs so that you can dedicate at least 2 to a VM.  GSX is great, but
can't dedicate more than one proc per VM.  Also, you have to keep in
mind that your physical (or in VMWare's case Virtual) disk activity will
most likely be tremendously greater outside the lab.

VMWare works fine if you can dedicate spindles to the Exchange, but
again it is a lot of overhead to run in that environment.

We do run our last Exchange 5.5 server with no stores in a VM on GSX as
a site connector to the rest of our county organization and it works
fine with no database activity.

Our engineering guys (who have no email experience at all) are trying to
make the argument that we should move our Exchange environment to
Vmware.  I know that Vmware is good for test labs, but has anyone run it
in production?  Their website says that it works with Exchange, but they
want to sell their product.  Please let me know if you have any horror
stories or fairy tales about that configuration.
