I believe that it's better to have functional mailboxes for functions that continue after the people have left. It's much easier to reassign the task and the e-mail that way.

It looks like the mail was sent directly to them. They'd have to look at the headers and look at the To: field. You can use the forward option, which maintains the name of the terminated user in the To line of the actual message in Outlook, and requires not looking at the headers. That way anyone sending to the terminated employee gets a living breathing person who can update them as to the situation as opposed to being asked to resend due to an issue at your company. Also, user "such and such" can then monitor incoming mail for the former employee and let you know when it's acceptable to remove the address completely.
