Assuming you have a CD Rom, you may wish to try Winternals ERD
Commander. Winternals I believe sold their ERD product to MS and
it's been scrapped, but you can still find boot copies of the CD out
there. Boot with the CD (pressing F6 to load any SCSI drivers), and
it will load the repair environment from the CD allowing you to
repair, or in this case copy, files on the server.
With the system booted, you can look at your disks and see what data
can be recovered.
In the past I've used it with a large size USB disk to move files
from failed PC's and servers.
Hopefully it's just your OS that has tanked, and the file structure
is still intact.
Let me know if you're unable to locate a copy.

help!
We have an exchange 2003 server whose system disk is scragged (don't
ask) It is part of a site and the other server is OK.
We assume the database and logs are OK, (but inaccessible for the
moment)
Does anyone have a link to how ro recover? Everything I google seems to
assume the opposite, the data has gone.
If we rebuild the server how do we relink the database?
Can we mount the database on another existing server and connect to it?
Any advice would be gratefully received. A KB for exactly this
situation, call pss,
