In my 12 years in the trade, I've never come across anything more gotchaful
than moving to Exchange 07.
I think the answer depends a lot on what your immediate objective and
long-term upgrade strategy is. Is the 07 server going to be just another
mailbox server in an 03 environment, or are you looking to go all-07 fairly
quickly? If the latter, then 07 can't use a front-end -- you'd have to
either deploy an edge server, or fold all three of your 03s into one 07.
As for particular gotchas, the best one for me was that if have an internal
hostname that differs from the public hostname, you'll have to buy a new SSL
certificate that can handle the job.
07 doesn't like Public Folders, and managing them could get hairy. Handles
them entirely differently from 03, and if you have both in on it, it could
case trouble. Back up your PFs twelve ways from Sunday before 07 takes
over.
07's relationship to AD is very different and confusing. ADUC is no longer
involved in the management of mailboxes, mail users, or contacts. There are
two bosses in charge of AD now, and Exchange 07 is a jealous master.
Unless you become a Power Shell master, figure on spending at least three
times as much time (and colorful language) on the simplest tasks that in 03
took one or two clicks.
