(assuming 2007 behaves like 2003) You could use the logfiles for c\windows\system32\logfiles\w3svc1 and use logparser to parse the logs (or import into excel 2007 - 1M rows importable )
The logfile will give you the username and user agent (amoungst others) which *should* vary per mobile device type, you just need to create a user agent to mobile device lookup table. (ie get a sample phone of each type.
